Cheese Fry Grilled Cheese

I follow enough food blogs and watch enough Food Network to know that I’m supposed to include a cute little life anecdote with each of my recipes. Well, I have news for you. My anecdotes aren’t always so cute. That being said:

So last weekend I got really smashed. The next day I couldn’t eat anything until about 3pm. But when 3 o’clock hit, I needed SERIOUS food. I ordered the Bacon Cheddar Burger from the pub around the corner. I’m not even much of a burger person, but this burger is perfect hangover food. And it’s huge! I ate half and had tons of fries leftover. Leftover french fries. That’s all it takes for a grilled cheese to be born in my house.

Cheese Fry Grilled Cheese
2 slices sourdough
1 slice of cheddar cheese
1 slice of American cheese
2 tbsp cheese spread (like Trader Joe’s Pub Cheese)
leftover French fries (or freshly made if you’re a fancy-ass)
butter

Spread cheese spread on one slice of bread, and place the two slices of cheese on the other slice. Lay out a single layer of fries. (If using leftover french fries, make sure to heat them beforehand. I reheat mine in my skillet so they get crispy.) Salt if desired.

Close up your sandwich and butter each side of the bread. Cook over medium heat until browned and melty. Using a press will give you the best results.* Let cool before cutting and eating.

Now you have TWO hangover meals in one. Not too shabby.

*If you don’t have a grilled cheese press, you can use a big can of tomatoes or fruit, wrapped in foil, to press your sandwich.
