Texture. It’s more important than most people give it credit for. It can be the make or break element of a dish. It’s also psychological and shit. I mean, I’m no psychologist… but I know having a lick of a sucker and taking a bite of a piece of chocolate feel different to me. Something about having the substantiality of the bite and the chewing that gives me more of a feeling of satisfaction.

So I ask you… why do all cheeseburger pizzas have ground beef on them? Eating a spoonful of ground beef is not the same as taking a bite of a burger. I wanted a pizza with burger patties on it. So you know, I made one. Because I always get what I want.

While I’m at it? I don’t want pickle slices on my pizza… unless they are soaked in beer and fried. YEAH. Gimme that shit.

Burger patties, lots of cheese, fried pickles, crispy bacon and (my favorite part) homemade IPA tomato jam for the sauce. Sweet and salty, ooey and gooey. Enjoy!

pizza dough (homemade or storebought–I prefer Trader Joe’s)
1 batch tomato jam
1 batch fried pickles
½ lb ground beef
½ lb bacon
8 oz cheddar, shredded
2 slices of cheddar
sesame seeds

Make all your shit up. The dough, the jam and the pickles.

Preheat your oven to 450°F with a pizza stone in the oven.

Fry up your bacon and remove to a paper towel-lined plate. When it cools a little, crumble it.

Shape your beef into tiny half dollar-sized patties. In the same pan with all that bacon grease, cook them for a two or three minutes on each side (medium heat). It’s ok if they are a little pinker than you like, they’ll cook up more in the oven. Set aside.

Roll out your pizza dough to the size you’d like it to be. Remove the stone from the oven and place the dough on top. Work carefully so you don’t get burnt. Quickly spread the tomato jam on top. Sprinkle shredded cheddar on top. Place mini burgers throughout and top each one with a piece of the sliced cheddar. Fill in the blank spots with fried pickles. Sprinkle with bacon and sesame seeds.

Using hot pads, place the pizza in the oven. Cook for 15-20 minutes or until crispy and melty.

Remove from the oven and let set a couple of minutes before slicing.

Devour.
