Uber Epic Scramble

For breakfast, scrambles are the tits. It’s simple and fucking delicious every time. I was throwing shit together the other day and it turned out so well that I had to write it down. This isn’t one of my egg white healthy shits. It’s got potatoes and sausage and cheese and it’s exactly what you’re going to make for breakfast tomorrow morning.

Uber Epic Scramble

You can shove anything in a scramble, why not shove the best shit possible in there?

Uber Epic Scramble
serves 2
6 eggs
2 tbsp milk
½ cup baby purple potatoes, sliced
½ cup baby portobello mushrooms, whole
½ cup chicken apple sausage, sliced
¼ cup aged white cheddar, crumbled
a handful of fresh baby spinach leaves
¼ cup parmesan cheese, freshly shredded
½ tsp cayenne pepper
salt and pepper
olive oil
maple syrup

Whisk together eggs and milk, set aside.

Heat oil in a iron skillet over medium heat. When sizzly, add in baby purple potatoes. Cook over medium heat for about ten minutes, stirring frequently. When the slices are soft on the inside, crispy on the outside, add in sausage and mushrooms. Cook an additional 5 minutes.

Once everything is looking browned and yummy, pour in egg mixture. Salt and pepper generously and add in cayenne pepper. Continuously stir the scramble with your spatula to… well… scramble it. Once the eggs are cooked, stir in cheddar cheese and spinach leaves. Remove from heat.

Spoon into bowls and top with parmesan cheese and a drizzle of maple syrup. Serve with a crusty, warm roll.
