Pork ‘n’ Bean Grilled Cheese

The concept of comfort food is really dependent on your life experiences. But whoever you are, there’s nothing better than comfort food in the dead cold of January. Personally, I love grilled cheese, mashed potatoes, baked beans, mac and cheese, chicken pot pie… shit, now I’m hungry.

Which is why I’m happy I did this… combining two of my favorites, I present to you… the Pork ‘n’ Bean Grilled Cheese. Crispy, salty, gooey, awesome. Store it away for winter, y’all!

Pork 'n' Bean Grilled Cheese

The ultimate winter comfort food.

Pork ‘n’ Bean Grilled Cheese
2 slices sourdough bread
½ cup prepared baked beans (my recipe here!)
¼ cup diced ham
4 thick slices cheddar cheese
olive oil

Lay out the sourdough bread slices and cover in cheese.

Spread baked beans over one slice and then top with diced ham.

Preheat an iron skillet over medium heat. Drizzle the skillet liberally with olive oil. Close up sandwich and place in heated skillet. Using a bacon press, flatten the sandwich a bit so it’s easier to scarf down.

Cook for 3-5 minutes, each side. When bread is brown and crispy and cheddar is nice and melty, you are good to go.

Remove from heat. Let set a minute before cutting in half. Serve it up!
