Caprese Grilled Cheese on Focaccia

I spend so much time trying to come up with innovative ideas in the kitchen, but when it comes down to it, sometimes the simple ones are the tastiest. And in that light, I’m going to simply leave it at that.

Caprese Grilled Cheese on Focaccia
your favorite focaccia
thinly sliced tomato
fresh mozzarella, thickly sliced
fresh basil leaves, torn
garlic-infused olive oil
salt & pepper
butter

Build it. Slice your bread in half, lengthwise. Cover the bottom piece of bread with a layer of mozzarella. Add the basil, followed by the tomato slices. (Enough to cover the bread.) Drizzle with the olive oil, and be generous. Sprinkle with salt and some freshly cracked black pepper. Top with more mozzarella and close up the sandwich. Lightly butter the outside of the bread slices.

Cook it. Preheat your skillet over medium heat. (I prefer cast iron.) If needed, add butter or olive oil to your skillet. Place the sandwich in the heated skillet. If your sandwich is tall or the bread is slightly rounded, you’ll want to use a sandwich press to compress it. (As always, if you don’t have a press, you can use a large can of veggies or something, cover it in foil and squash your sandwich that way.) Cook for a few minutes on each side until the mozzarella is melty.

 Eat it. Don’t burn your mouth though.
