Topless o’ the Mornin’ to You Burger

My first post back was supposed to be a Bojack Horseman recipe. And it’s still coming. I promise. But hiccups are to be expected and I’m getting back on track with a Bob’s Burgers specialty.

Last season’s premiere was a blast with several fan-animated scenes of the Belchers turning the restaurant into a top tier brunch restaurant. It was a great episode, but the greatest part was the burger that they served was called the Topless o’ the Mornin’ to You Burger. I have no idea what that’s SUPPOSED to be, but we made up an open-face burger topped with sausage and gruyere frittata. And it’s freaking amazing.

That being said: Season 9 of, yes I’m going to say it, my favorite show of all time, premieres this Sunday (September 30th) on Fox. Make last season’s premiere burger to celebrate this season’s premiere. Seems simple enough.

Topless o' the Burger to Ya

Topless o’ the Burger to Ya

the Topless o’ the Mornin’ to You Burger
4 onion buns, top removed
4 all beef burger patties
12 slices of brie
8 oz breakfast sausage
4 oz gruyere, shredded
8 eggs
2/3 cup heavy cream
2 tbsp fresh rosemary, chopped
2 tbsp fresh sage, chopped
salt and pepper

Preheat oven to 350°F.

Combine sausage, sage and rosemary in a skillet and cook over medium heat. Break up crumbles with a wooden spatula as it cooks. Remove from burner to cool.

Meanwhile, whisk together eggs, cream and gruyere. Add in sausage crumbles once cooled. Salt and pepper liberally. Pour into a pie pan and bake for 35 minutes.

While the frittata is baking, heat skillet over a medium-high burner (with sausage grease in tact). Place raw burger patties in preheated skillet. Sprinkle the top of the patties with salt. Cook to desired doneness. (I like medium, so I cook for about 4 minutes per side.) Once burgers are cooked, remove to a plate and place the buns, cut side-down in the skillet to toast them.

Remove frittata from oven and slice.

Assemble burgers. Bun, burger, 3 slices of brie and a hearty slice of frittata.

Drink excessive mimosas.
