This is the last week. The last week we’ll ever be able to say “I can’t wait until next season of Breaking Bad.” Are you emotionally ready to handle that? I don’t think I am.

I’m going to be honest with you, here. I’m fresh off of finishing the Wire. (Like, within the past hour.) I know I’m late to the game on that one. But everyone compares it with Breaking Bad, and I gotta say, it’s relevant. That world just ended for me and it’s incredibly sad to not have a window into those characters’ lives any longer. And seeing as I closely relate the two shows, it just makes me hyper aware of how I’m going to feel when Breaking Bad ends. Jesse Pinkman, I love you, don’t leave me. Saul! I hope you get your spinoff. Skylar… yeah, you can drop off the face of the Earth, I’m good on that one.

Ok, ok, do we feel a little better now that we’ve talked that through? I think I do. But in case you need that extra step, in case you’re throwing a theme party for the end of days, I got ya covered. Break out your blue meth candy. (You can order it on Amazon, yo.) And whip up some fried chicken sandwiches, Los Pollos Locos style, to fill that Breaking Bad shaped hole in your heart.

We gots a couple options for ya. The first, traditional fried chicken, served up on a waffle with some maple syrup and bacon. The second, southwest-seasoned fried chicken, sandwiched between a cheddar jalapeno biscuit and topped with colby-jack, avocado and bacon. They are perfect. Cause that’s how Gus works. Perfection.

Southwest Chicken and Biscuit Sandwich
(makes 4 sandwiches)

For the biscuits
1/2 can refrigerated biscuit dough
1/2 cup shredded cheddar cheese
1 jalapeño, seeded and diced

For the chicken
4 chicken cutlets, pounded thin
1/2 cup buttermilk
1 egg
1 tbsp sriracha
1 cup flour
1 tsp seasoned salt
1/2 tsp Mexican oregano
1/4 tsp ground cumin
1/4 tsp cayenne pepper
oil for frying

For the sandwich
4 slices colby jack cheese
4 slices of bacon, cooked up and cut in half
8 avocado slices

First, biscuit time. Pop that can. Shove 2 tbsp of shredded cheddar and a sprinkle of peppers on a biscuit, then work it into the dough. Shape it back to how it was, maybe a little flatter. Repeat. Cook according to package.

Second, chicken time. In one bowl, mix your buttermilk, egg and sriracha. In another, mix your flour and seasonings. Dip it in the wet, then dip it in the dry. Dip it in the wet, then dip it in the dry. (Yes, I’m asking you to double-bread them.)

Preheat your oil in a skillet over medium-high heat. Fry each cutlet for about 4-5 minutes on each side, or until cooked through and breading is brown and crispy. Set on paper towels to drain the oil.

Third, construction time. Slice your biscuits in half. Biscuit, chicken, cheese, bacon, avocado, biscuit.

A chicken and biscuit sandwich so good, it’ll blow your face off.

All-Day Breakfast Chicken and Waffle Sandwich
(makes 4 sandwiches)

For the waffles
4 servings of waffle mix (or frozen if you don’t have a waffle maker)

For the chicken
8 chicken tenders, pounded thin
1/2 cup buttermilk
1 egg
1 cup flour
1 tsp seasoned salt
1 tsp freshly ground black pepper
oil for frying

For the sandwich
syrup
4 slices of bacon cooked up and cut in half

Make your waffles according to the package directions.

In one bowl, mix your buttermilk and egg. In another, mix your flour and seasonings. Coat them with the buttermilk, followed by the flour mixture, back into the buttermilk, back into the flour mixture.

Preheat your oil in a skillet over medium-high heat. Fry each cutlet for about 4-5 minutes on each side, or until cooked through and breading is brown and crispy. Set on paper towels to drain the oil.

Assemble your sandwiches. Half a waffle, 2 tenders, bacon, a healthy drizzle of syrup, the other half of your waffle. Serve alongside a little cuplet of syrup for dipping, if desired.

    I too am a Breaking Bad fan (I was also late to the party, but thanks to Netflix, I caught up before the start of last season), though I can’t help but think that the show lost something when they killed Gus off (kinda like when they killed of Adibisi on Oz). I mean, Giancarlo Esposito was perfect for the role and it really showed off his range as an actor (check him out as Buggin Out in Spike Lee’s Do The Right Thing.). That being said, I totally look forward to seeing how this will all play out in the end. In a perfect Breaking Bad world, Jesse will spill his guts to Hank and go all Witness Protection against Walt and Skyler will get caught in the crossfire of it all. Twitter is gonna be blazing on Sunday night! And re: The Wire, that show was a fabulous heartbreaker! The last season was kinda disappointing, but the other 4 were spectacular!

    As for the Los Pollos Hermanos tribute, all I can say is “Muy Bien!”. Viva Los Pollos Hermanos!
